For everything that we do not produce directly at the “Aia delle Oche” we provide the food from nearby farms to ensure a short food supply chain which allows us to use the most genuine products. To mentioning a few of them: the cheeses of the Dottore, the mill Paciscopi, La Ginestra, Corzano e Paterno, La tenuta Barbadoro, Marco Panchetti, the farm Nieddu Giovannino in San Casciano, the Mill of the ancient grains in Montespertoli, the farm of Graziano Latini in Montespertoli. All these farms provide us honey, cured meats/cold cuts/salami, pasta and cereals, milk and butter, cheese, Chianti Docg wine and olive oil.
